Risotto but with an English twist about it

Time: Quick - less than 30 minutes
Difficulty: Average - a standard adult who feeds themself could do it
Equipment
- Pressure cooker
Ingredients
- Condiment, cube, or tube
- Swiss bouillon - 2 teaspoon
- Drink or liquid
- Water - some
- Wine (red) - some
- Eggs / cheese / dairy
- Cheese (Stilton) - some
- Oil
- Olive (extra virgin) - 1 tablespoon
- Rice
- Arborio - 2 cup
- Vegetable
- Celery - some
- Mushrooms - some
- Onion (chopped) - 1
Method
Take a few sticks of celery and chop them up, and fry them in the pressure cooker pan with a chopped onion for a couple of minute.Add the rice and fry for a couple more minutes. Add the bouillon powder and some red wine, and boil for a minute or so to reduce that wine a bit.
Add some pieces of stilton, cover with water, and add a drop more water. Put the lid on the pressure cooker, bring it to pressure, and cook for 7 minutes.
Open the lid, break up some mushrooms into the pan, and pour in the olive oil. How's it looking for wetness? Looking still quite wet? Leave it as is. Looking like it might be getting dry? Add a splash of red wine. Stir it all up again, put the lid back on, and cook it under pressure for another 2 minutes. It will hopefully now be just the right consistency to serve.
